Périgord Salad

Ingredients :

• 2 lettuces
• 2 Cooked goose giblets
• 50 g bread (cut into 1 square)
• 125 g walnuts (shelled)
• Walnut oil
• Wine vinegar

Preparation:

• Put the lettuce into a salad bowl.
• Pour some oil into a frying pan and fry the giblets for 3 minutes.
• Add the bread cubes, fry until crunchy and golden, and then add the walnuts.
• Turn up the heat (do not burn anything).
• Add a dash of vinegar to the pan. Still it all around for a second or two.
• Pour this hot mixture over the lettuce.
