Ingredients :

• 1 sole
• 60 g butter
• 1 shallot (finely chopped)
• some minced parsley
• 1 glass white wine
• some breadcrumbs
• salt, pepper

Preparation:


• Melt the butter in a frying pan.
• Add salt, pepper, the shallot and the parsley.
• Sprinkle over the glass of white wine and the breadcrumbs.
• Add small pieces of fresh butter.
• Poach the sole in salted boiled water for 10 minutes.
• Then in a dish ready to be placed in the oven: put the sole with the sauce on top.
• Leave your dish 10 minutes in the oven at thermostat 7 (210°C / 410°F).
