• 6 large eggs
• 125 gr of fresh mushrooms cut into small pieces (diced)
• A knob of butter
• Salt, pepper

Preparation:


• In a pan, melt the butter and add the mushrooms.
• Add salt and pepper.
• Cook the mushrooms until they turn brown.
• Strain the mushrooms.
• Beat the eggs in a bowl.
• Add the strained mushrooms to the eggs.
• Add a knob of butter to the pan, which should be spread every over the surface of the pan as it melts.
• The omelette should be cooked over a high heat.
• Add the eggs and the mushrooms to the pan (Cooking time is 2 to 3 minutes).
