Cancoillotte Croque-Monsieur
Cancoillotte is back. A Croque-Monsieur is traditionnaly made with gruyere cheese. Here, it is a special flavour with Cancoillotte. Cancoillotte is spelled with 2 l and 2 t.
Another nice and very easy recipe with Cancoillotte cheese is called Cancoilloeufs (it means Cancoilotte and Oeufs (Eggs)).

Clockmaster's chicken
This is a nice recipe with Cancoillotte cheese. Cancoillotte is a specialty cheese from the Franche-Comté region, and is made by melting metton, a primary ingredient that is naturally low in fat (skim buttermilk pressed into cubes). This very flavourful cheese can be eaten cold (on bread) or hot in numerous combinations:

It is often served in the company of rustic dishes.

Pithiviers or Galette des rois
This is a dessert recipe: an almond-flavoured pastry called Galette des rois (literally Round for the King) or Pithiviers.
In France, we celebrate Epiphany (festival celebrated during the first days of January) with this pastry.
